Here’s a simple and delicious recipe for making Biryani, a traditional Indian dish with aromatic spiced rice, meat, or vegetables. 🍛✨


Ingredients

For the Rice:

  • 2 cups Basmati rice (soaked for 30 minutes)
  • 4 cups water
  • 1 bay leaf
  • 2-3 cloves
  • 2-3 cardamom pods
  • 1 cinnamon stick
  • Salt to taste

For the Meat or Vegetables:

  • 500g chicken/mutton (or 2 cups of mixed vegetables like uttoncarrots, peas, and potatoes)
  • 1 cup yogurt
  • 2 onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 2-3 green chilies (slit)
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp coriander powder

For Garnish:

  • A handful of fresh mint leaves (chopped)
  • A handful of fresh cilantro leaves (chopped)
  • 2 tbsp ghee or butter
  • 1/4 cup fried onions
  • A few strands of saffron soaked in 2 tbsp warm milk

Instructions

1. Prepare the Rice

  1. In a large pot, bring water to a boil with bay leaf, cloves, cardamom, cinnamon, and salt.
  2. Add the soaked Basmati rice and cook until 70% done. Drain and set aside.

2. Cook the Meat or Vegetables

  1. Heat oil or ghee in a large pan. Sauté the sliced onions until golden brown.
  2. Add ginger-garlic paste and cook until fragrant.
  3. Stir in the chicken/mutton or vegetables. Cook until lightly browned.
  4. Add turmeric, chili powder, garam masala, cumin, and coriander powder. Cook for a minute.
  5. Mix in yogurt and chopped tomatoes. Cover and cook until the meat/vegetables are tender.

3. Layer the Biryani

  1. In a heavy-bottomed pot, layer half the cooked rice.
  2. Add a layer of the cooked meat or vegetables. Sprinkle with mint, cilantro, fried onions, and saffron milk.
  3. Add the remaining rice on top, followed by another garnish layer.

4. Dum Cooking (Steaming)

  1. Cover the pot tightly with a lid (seal edges with dough if needed).
  2. Cook on low heat for 20-25 minutes to allow the flavors to meld.

5. Serve and Enjoy

Fluff the Biryani gently with a fork. Serve hot with raita (yogurt sauce) or salad.
